Long before I started my business, it was pretty much clock work that I go to the farmers market to purchase my produce. After Living Lotus Chocolate was born and I vended at more and more farmers markets, there was little time for me to be able to go to my “home” market.
So last week when I hit up Trout Lake Farmers’ market, I was overjoyed! I was even more overjoyed when I found boxes of local, organic red peppers on fire sale.
With the weather turning colder, what better to make with my treasures from the market than soup?
The beauty of this recipe is it’s cheesy flavour (not to mention how easy it is to make).
SMOKED RED PEPPER SOUP
Serves 4
6c red peppers chopped
2 avocados 1 + 1/3 c Cashews soaked
1 + 1/3 c Water
2t Himalayan crystal Salt
1/2t Smoked paprika
This is a raw soup, so throw it all in a Vitamix until warm and you’re good to go!
If you don’t have a high speed blender, feel free to roast or steam the peppers to soften them up, then use an immersion blender on everything.
