A complex dark chocolate made with Tsiriari cacao from Junín, Peru, this 70% bar is for anyone who likes their chocolate with a little more going on. The cacao comes from Peru’s mid-southern jungle, where it is grown at 600–900 metres and produced by a small association of cacao farmers.
Tsiriari is an especially interesting cacao. It’s a dark chocolate that changes as you eat it, with savoury and fruity notes appearing alongside the familiar richness of cacao.
We make this single-origin Peruvian chocolate from cacao beans, right here in Vancouver, rather than starting with pre-made chocolate. The result is a bar that lets the character of the Tsiriari cacao come through.
